THE TOUR BUS - MRS. BALDERAS’ MEXICAN FEAST
Gotta love a home cooked meal…
Ruben’s mom brought us boxes upon boxes of homemade Mexican food today.  There were a couple bags of chips, flour and corn tortillas, rice and beans, chicken enchiladas, cheese enchiladas, and HUGE chili rellenos.  In addition to these meals, there were about 5 different salsas.
I didn’t have the appetite to try all of these, but I gave it a good try.  I usually dislike peppers on everything.  Bell peppers always sit weird with me and I don’t even really like their flavor too much.  There were peppers on these enchiladas, but for some reason I enjoyed them on there.  Maybe it was because they were cooked really soft, or that they were sparsely placed on the enchiladas, but I didn’t have the urge to take them off.
The red salsa was really spicy.  It had a mild flavor but a lot of back end heat.  I tried it on a few chips.  The salsa verde however had tons of flavor, but less heat.  It also had big chunks of pork in it, which may have contributed to its semi chinese flavor.
One thing I wish I’d gotten to try more of was the chili relleno because it looked really interesting.  Huge chunks of shredded cheese were placed in the middle of the pepper, which was then deep fried and loaded with sauce and more cheese on top.  I was told it was really spicy, but the bite I got didn’t scare me off.  What scared me off was the fact that it was just a huge chili pepper and I knew I would have been in pain for hours afterward.
This was enough food to feed an army.  We somehow devoured just about everything in this picture with about an hour.  I wish there were some leftovers though, especially those enchiladas.
