PI - PROSCIUTTO BITES
These were described on the menu as “fontina blended with prosciutto, rolled in house-made bread crumbs, then oven blazed”.  When they came out looking like my falafel from the other night, I was a bit surprised.  Surprised yes, but in no way disappointed.
There was a nice rosemary flavor throughout this appetizer.  I loved the way the nutty cheese mixed with the earthy herbs, and the sparse prosciutto added just enough salt.  These appeared as a simple fried appetizer, but the flavor was much cleaner and more complex.  Even the marinara dipping sauce was great.
The flavors were all spot on, and this was a nice prelude to our meal.  There could have been more prosciutto though, because the cheese was slightly overpowering.  I think I’m going to try to make these at home when I get back from tour, I wonder how that will go.
