SARITA’S MACARONI AND CHEESE - LA MANCHA
New York has a lot of specialty restaurants - there’s a restaurant that specializes in peanut butter and jelly sandwiches (Peanut Butter & Co.), a dumplings only restaurant (Rickshaw), and a restaurant that serves only grilled cheese sandwiches(Grill Cheese Co.).  So when Dan told me that he was going to a Macaroni and Cheese restaurant for dinner, I pleaded with him to bring something back for me.
After perusing the menu, I decided on the La Mancha, which is manchego cheese, onions, and fennel.  There was a big part of me that told me to get the Alpine which is just gruyere cheese and slab bacon, but I felt like I owed it to myself to try something a little different.  It’s not everday that you get a chance to try a dish with fennel and manchego cheese.
I didn’t get to dive into this until about 2:30 in the morning after I returned from the bar after a long night of boozing with an assortment of old, dear friends.  I remember the first few bites tasting very interesting, but I think that was due in part to the whiskey that was still on my breath mixing with the intense flavor of the fennel.  After a couple of bites I hit my stride.
The flavor combination was very aromatic.  The fennel and onion seemed to lighten up this very heavy meal.  It tasted in one moment like a sausage, and the next like licorice.  One bite though had way too much fennel in it and kinda made me gag.  Other than that, this was an awesome late night snack.  I could not have eaten this as dinner and been satisfied, but I guess every food has its own time and place.
